Preserve the Season: Stone Fruit

Stone fruit season is one of the highlights of summer. Peaches, nectarines, plums, and apricots offer a fleeting window of abundance—and preserving them is one of the best ways to enjoy their flavor long after the harvest has passed.
Part of our monthly Preserve the Season series, this hands-on workshop explores practical techniques for capturing the best of the harvest. Guided by Christina Connelly of Apple Blossom Acres, you'll learn the fundamentals of home preservation while working with the freshest stone fruit available that week.
In this workshop you'll:
- Learn the basics of home preservation and safe canning practices
- Work with peak-season stone fruit selected for flavor and quality
- Understand how fruit, sugar, acidity, and pectin work together in preserves
- Make a seasonal jam, preserved fruit, and fruit-based beverage ingredient
- Gain the confidence to continue preserving summer fruit at home
Because we work with fruit at its peak, the exact recipes may vary from season to season. Together, we'll create three preserves that showcase the best of what's available, while learning techniques that can be applied to a wide range of fruits.
You'll leave with one jam, one preserved fruit and one preserved beverage and the skills to continue preserving the harvest at home.
