Discover the magic of traditional Japanese fermentation in this hands-on workshop with chef and teacher Hiroko Kurosaki. Together we’ll explore the art of miso and koji, two foundational elements of Japanese cuisine that bring depth, flavor, and nourishment to everyday meals.
In this class, you will:
- Craft a batch of fresh miso alongside Hiroko and take home an 8 oz jar to ferment and enjoy in the months ahead.
- Learn about the transformative power of salt koji and create a variety of seasonal ferments using fall vegetables.
- Bring home two jars of vegetable ferments to continue bubbling and evolving in your own kitchen.
- Taste the subtle sweetness of amazake, a traditional drink made from fermented rice, as part of your fermentation journey.
By the end of class, you’ll have three jars of your own handmade ferments, along with the knowledge and confidence to continue incorporating miso, koji, and other traditional techniques into your cooking at home.
